The Rotoku is a WÜSTHOF innovation that complements the "three virtues" of a Santoku knife - cutting meat, fish and vegetables - with three more features: chopping, rocking cuts and transferring ingredients. Its curved edge makes it possible to achieve flowing rocking cuts that wouldn't be possible with a flat Santoku blade. The hollow-edge indentations along the blade create small air pockets that minimise food sticking. The Diamond-Like Carbon (DLC) coating reduces friction so that the blade glides even more smoothly through both hard and soft ingredients. The handle with its non-slip Hexagon Power Grip© structure fits securely and comfortably in the hand.
