During the pre-sharpening and sharpening phases, diamond disks create optimum blade structure with minimal blade wear. Following that, ceramic disks are used in the polishing phase to give your blade the finishing touch. The polishing phase can even be used to sharpen serrated blades.

The Graef knife sharpener’s 15° sharpening angle is ideal - and not only for Asian knives. Your conventional European knives with a 20° sharpening angle can also be sharpened to 15° during the first sharpening phase, which will improve longevity and cutting performance.
